Mint and strawberry mousse (serves four)

Ingredients for the mint mousse


1 bunch fresh peppermint
200ml creamy yoghurt
200ml double cream
3 gelatine leaves
1 shot peppermint liqueur
Sugar syrup


Ingredients for the strawberry mousse


1kg frozen strawberries
1 shot Grenadine
1 shot Raspberry liqueur
200ml double cream
3 gelatine leaves
Sugar syrup
Fresh strawberries (to garnish)
Icing sugar (to garnish)


Method for the mint mousse


1. Using a fork, mash the mint leaves together with the yoghurt, some sugar syrup (to taste) and the mint liqueur
2. Blend until it is mint-green and smooth
3. Soak the gelatine in cold water and blend with the heated mint liqueur
4. Mix with the yoghurt mixture
5. When it begins to thicken, add the whipped cream
6. Spoon into dessert glasses to form the first layer and refrigerate


Method for the strawberry mousse


1. Blend the strawberries with a shot of grenadine and sugar syrup
2. Soak the gelatine leaves in cold water and blend with heated raspberry liqueur
3. Mix with the strawberry mixture
4. When it begins to thicken, add the whipped cream
5. Top the mint mousse (should have set by now) with the strawberry mousse
6. To garnish, place some fresh strawberries on top and decorate with icing sugar


Wine recommendation


Serve with a noble sweet Riesling or Silvaner Auslese. The high sugar content of the wine will accompany the fruity flavour of the dessert perfectly
