Exotic Fruit Soup with Rivaner
Many a good cook uses wine to refine a recipe and add nuances to a dish. Wines of Germany is delighted to present this delicious recipe for exotic fruit soup from young, dynamic chef – Patricia Faisst – a native of Nierstein in Rheinhessen, who prepares regional specialties with modern flair.
With the summer finally here, try this summer fruits dish and enjoy with a glass of fresh German wine.
Serves 4
Ingredients:
0.5 litre/2 cups Rivaner (synonym: Müller-Thurgau) wine
0.5 litre/2 cups water
300 g/10.5 oz sugar
4 Star anise
25 g/ca. 0.9 oz fresh or marinated ginger (generous 4 tbs)
10 fresh mint leaves
8 crushed cardamom seeds
1 vanilla bean split lengthwise
1 cinnamon stick
Fresh fruits (e.g. kiwis, apples, peaches, oranges, bananas, red currants)
What to do:
1. Place all ingredients – except the fruits – into a pot, bring to the boil and cool in a closed container in the refrigerator (if possible, overnight).
2. The following day, pass the liquid through a sieve.
3. Decoratively slice or cut the fruits and place in four soup bowls. Carefully pour the chilled, spicy soup over the fruit.
Tip:
Serve with lemon sorbet or lemon ice cream for a truly tasty treat.
Suggested wines:
Such a seductive dessert with oriental spices and pronounced sweetness, calls for an equally forward wine. Select a wine with sweetness and rich aromas such as a Riesling or Grauburgunder (Pinot Gris), or opt for more spicy varietals such as Scheurebe or Muskateller.
